Tritate la cipolla evitando di lasciare pezzi troppo grossi.&lt;br /&gt;Un filo d'olio nella pentola per il risotto, versate la cipolla e fatella indorare a fiamma vivace: non serve friggerla troppo, che poi il gusto diventa esageratamente deciso e fa pure male alla salute. Versate il radicchio e mescolate continuamente: autonomamente lascierà dell'acqua e si ridurrà parecchio di volume. Quando la sua acqua si è praticamente asciugata versate un po' di birra e fatela sfumare, ne basta un quarto di bicchiere da acqua.&lt;br /&gt;Evaporata la birra versate il riso, io consiglio il veronese &lt;/em&gt;&lt;/span&gt;&lt;a href="http://www.ricette20.it/cucina/index.cfm?cx=004839070071172393981%3Aadzkedigyd0&amp;amp;cof=FORID%3A11&amp;amp;ie=UTF-8&amp;amp;q=riso+vallone+nano&amp;amp;sa=Cerca#1336" target="_blank"&gt;&lt;span style="font-size:130%;"&gt;&lt;em&gt;riso vialone nano&lt;/em&gt;&lt;/span&gt;&lt;/a&gt;&lt;span style="font-size:130%;"&gt;&lt;em&gt; per come tiene la cottura e perchè è veronese come il radicchio che stiamo usando: la loro "amicizia" aiuterà a creare il piatto perfetto. Da questo momento puntate il timer dei venti minuti: non si sgarra. Fate saltare nel soffritto il riso per un paio di minuti, mescolando continuamente, perchè altrimenti è un macello.&lt;br /&gt;Aggiungete due mestoli di brodo, che chiaramente continua a bollire nell'altra pentola, e portate la fiamma bassa che garantisca un minimo di ribollore nel riso. Mescolate, mescolate, mescolate. Ogni tanto aggiungete un mestolo di brodo. La regola è semplice: il riso deve sempre rimanere morbido ma non dovete annegarlo!&lt;br /&gt;Due tre minuti dalla fine della cottura assaggiate il vostro capolavoro ed eventualmente correggete con il sale grosso. Al ventesimo minuto spegnete tutti i fuochi e mantecate con abbondante formaggio grattuggiato e dell'olio d'oliva, o del burro. Lasciate ripostare in pentola per qualche minuto, coprendola però con uno straccio.&lt;br /&gt;Servite e preparatevi ai complimenti dei commensali.&lt;/em&gt;&lt;/span&gt; &lt;/p&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;p&gt;&lt;span style="font-size:130%;color:#ff0000;"&gt;Birra&lt;/span&gt;&lt;/p&gt;&lt;br /&gt;&lt;br /&gt;&lt;p&gt;Per rendere il tutto perfetto consigliamo di accompagnare il piatto con una buona birra. Abbiamo chiesto aiuto ad un esperto, messer Allan, titolore del &lt;a href="http://www.macallans.it/" target="_blank"&gt;Macallan's Pub&lt;/a&gt; di Rovigo e mastro birraio.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;Il maggior carattere delle Pils si può apprezzare in primavera con le classiche trofie con il pesto (ottime anche con le Lager) o, in inverno, con un risotto al radicchio. La birra Pilsner ha un colore chiaro e una carbonatazione relativamente elevata, con un eccellente sapore di luppolo e un contenuto alcolico di circa il 4-5% per volume. Nel 1966 un &lt;span style="color:#000000;"&gt;fulmine&lt;/span&gt; colpì il pinnacolo di un trullo, scaraventandolo a più di 20 metri.
